Vegetable Poke Bowl with Marinated Beets

Ingredients

  • 2 scallions
  • 1 cup seaweed salad
  • 4 medium beets
  • ½ cup apple cider vinegar warmed
  • 2 watermelon radish
  • Beets are rich in folate (vitamin B9) which helps cells grow and function. Folate plays a key role in controlling damage to blood vessels, which can reduce the risk of heart disease and stroke.

Marinade

  • 1 ½ cups water
  • 1 cup apple cider vinegar
  • ¼ cup honey or agave
  • 2 tsp kosher salt
  • 1 tsp black peppercorns
  • 1 inch of fresh ginger minced
  • 1 tbsp sesame oil
  • 1 tbsp sesame oil 2 carrots peeled and shaved
  • ½ cup shaved sweet onion
  • 3 cups cooked brown rice
  • ¼ cup cilantro roughly chopped
  • 2 cups edamame
  • 2 (8oz) packages tempeh
  • Beets are naturally high in nitrates, which are turned into nitric oxide in the body.
  • Beets get their rich color from betalains, which are water-soluble antioxidants.
  • Beets are a good source of potassium, a mineral and electrolyte that helps nerves and muscles function properly.
  • Like other soy foods, tempeh has isoflavones. These are chemicals called phytoestrogens that have cancer fighting and antioxidant properties.
